A friend introduced me to this quick and easy cheat’s quiche recipe. You buy the pastry case ready made, so all you have to do is whisk up some eggs and milk, then add the fillings of your choice. Anything goes – so you can make plenty of veggie variations, too. As foil quiche cases are included when you buy the pastry shell, there’s less mess and washing up, too. Just make sure you buy a savoury pastry case, sold in supermarkets.

This quick and easy quiche recipe tastes so much better than a shop-bought version, yet takes the absolute minimum of effort to make. In the pictured one, I added ham to the whole quiche, then mushrooms to my half and broccoli to Mister’s (he has an aversion to ‘shrooms).

There are some tasty quiche ideas for the filling below. Anything goes, really – recipes like this are a great way to use up leftover scraps of food. Think beyond Quiche Lorraine (if you want to). You could also make a crustless quiche by greasing a flan dish then adding just the filling before baking. No pastry.

Makes 1 small quiche (serves 3-4)

Cheat’s Quiche recipe ingredients

Quiche

  • Savoury pastry case, 1
  • Eggs, 3
  • Milk, 100ml
  • Cheddar cheese, grated, 30g 
  • Meat &/veg, of your choice (optional – see below)

How to make quiche the easy way

  • Whisk together the eggs and milk in a glass jug. Season to taste.
  • Stir in the grated cheese.
  • Pour into the pastry case and press any other ingredients into the filling – see below for suggestions. Place the quiche, in its foil casing, onto a baking sheet – this will hold any spills and keep it steady while putting into the oven.
  • Bake in the oven at 180 degrees fan for about 20-25 minutes, until the filling is set and the quiche is golden.

Cheese

  • Extra cheddar, grated
  • Goat’s, cubed
  • Blue, cubed

Meat

  • Ham, chopped
  • Bacon, chopped
  • Chorizo, diced

Veg

  • Mushrooms, sliced
  • Broccoli, in small florets
  • Courgette, sliced
  • Pepper, diced
  • Asparagus, trimmed
  • Sweetcorn, tinned or frozen
  • Peas, frozen
  • Cherry tomatoes, halved
