So I’ve done Dirty Fries with bacon & BBQ sauce – now it’s the turn of Northern Fries, or cheesy chips and gravy. Northerners in the UK are known for their penchant for chips with gravy – even though I’m pretty sure I didn’t try them myself until I moved from the North East to the North West. Anyway, I love chips and gravy (and if you think that’s weird then just consider what you pour all over a roast potato. Which is basically just a very chunky chip.)

Then I tasted chips with gravy – and cheese. Wow. Everyone in the world seems to love cheesy chips. Well, these are even better. They’re so simple to prepare, and disappear very quickly indeed. Apparently a similar dish, called Poutine, is huge in Canada, although Canadian Poutine recipes use cheese curds rather than simple grated cheddar.

Feel free to use any kind of gravy or cheese you like for this recipe. As for the quantities, it really is up to you. We use Bisto Best beef or chicken gravy. If you don’t eat meat, their onion gravy is good too. Good old grated cheddar cheese is ideal. We used about 1/4 of a pint of gravy with a typical bag of frozen chips (about 900g), plus a few handfuls of grated cheese. This is extreme comfort food.

Ingredients

  • Frozen chips, any kind, 1 pack (most come in 900g- 1kg bags)
  • Grated cheese, to taste
  • Gravy, to taste
  • Freshly ground salt and pepper

How to make cheesy chips and gravy

  • Place the chips on a baking sheet, then oven cook as per pack instructions.
  • Place the cooked chips in a large pie dish or serving bowl, then scatter over the grated cheese. Put the bowl under a hot grill for a minute or so, until the cheese is melted and bubbling. Meanwhile, make the gravy.
  • Drizzle some gravy over the top, season, and serve with extra gravy on the side as a dipping and pouring sauce.
