Chilli Sausage Casserole
A change from bland stews and casseroles, this easy chilli sausage casserole recipe is a spiced-up version. The sticky, caramelised onion and sausages make for a lovely variation on classic chilli. It makes a nice change at Christmas, for example, to serve something with a different kind of spice.
You could use spicy sausages to add extra heat. If you’re wondering what to have with chilli sausages, this – of all recipes – could be it. If you have some bacon to use up, you could throw that in with the onion.
I love how very versatile this slightly sweet chilli sausage casserole is: it tastes equally yummy served with rice, mash, pasta or crusty bread. Great for kids, too – if you omit, or limit, the chilli. Use chilli powder instead of flakes if you like. Or try adding neither for a family meal where the home includes small children. You could always scatter chilli flakes, or pour chilli sauce, over the adults’ servings instead.

Chilli sausage casserole ingredients
- Olive oil, for frying
- Pork sausages or chipolatas, 1 pack
- Red onion, 1, finely chopped
- Brown sugar, 1 tsp (white will do if you have no brown)
- Garlic, 1 clove, crushed
- Chopped tomatoes, 1 tin or carton
- Red kidney beans, 1 tin, drained
- Flageolet beans, 1 tin, drained
- Tomato purée, 1 tbsp
- Chilli flakes, 1/2 tsp
- Thyme, dried, 1 tsp
- Parsley, dried, 1 tsp
- Red wine, a splash (optional; rose or white would also be fine)

How to make sausage casserole on the hob
- Heat a dash of olive oil in a saucepan and add the sausages, turning often, until they have browned. Remove from the pan and cut into bite-sized pieces.
- In another splash of oil, fry the onion until it starts to soften, then add the sugar and cook, stirring, until caramelised. Return the sausages to the pan, then add the garlic and stir.
- Add the tomatoes and beans, stir, then all the other ingredients. Stir, then cook for at least 20 minutes before serving.
- You may need to add a splash of water from time to time during cooking if the sauce seems a little dry.
Serve this sausage hotpot with rice, pasta, mash or crusty bread.
