Fish in Tomato Sauce
You can make this white fish in tomato sauce recipe with any of the most purse-friendly and readily available frozen white fish. Cod fillets do nicely, or feel free to use pollock, hake or basa, for example. As you’re using frozen produce, there’s no need to pat fish dry or any of that malarkey.
This delicious fish dish is really easy and quick to make. Once the sauce is made, it cooks in that in the one pan. Unlike baked fish in tomato sauce recipes, the total time taken can be under 30 minutes.
The fish cooks in the sauce, and it is packed with cheap, healthy store cupboard ingredients. A winner, winner fish dinner for me, as it’s just about as good for you as fish with salad. In my opinion at least, this poached fish in tomato sauce, Italian style, is far more flavoursome than many blander recipes.

Fish in Tomato Sauce ingredients
- Olive oil, for frying
- Shallots, 2, finely chopped
- Garlic, 1 clove, crushed
- Chopped tomatoes, 1 tin or carton
- Tomato puree, 1 tbsp
- Worcester sauce, 1 tbsp
- Soy sauce, 1 tbsp
- Bay leaf, fresh or dried, 1
- Parsley, dried, 1/2 tsp
- Thyme, dried, 1/2 tsp
- Sugar, 1 tsp
- White fish fillets, frozen, 2
- Lemon, 1/4, juice only
- Fresh parsley or basil, to garnish (optional)Â

How to make Fish in Tomato Sauce
- Heat a dash of extra virgin olive oil – or standard olive oil – in a large frying pan (which has a lid), then add the shallots and cook over medium heat, stirring, until they start to turn golden.
- Add the tomatoes and stir, then all the other ingredients apart from the lemon, and stir again. Simmer for around 10 minutes, stirring now and then during cooking, until the sauce begins to thicken.
- Add the fish fillets, then squeeze the lemon juice over the them. Put the lid on the pan, then cook over a low heat for 5 minutes. Turn the fish, then cook for another 5 minutes.
- Garnish with fresh parsley or basil – if you have some to hand. It’s by means essential. A twist of black pepper might be, however…
Serve this fish in tomato sauce with rice, pasta, chips, mash or new potatoes.
