Gingerbread Trifle
This easy gingerbread trifle recipe was inspired by ‘Lebkuchen‘ – those German Christmas treats consisting of chocolate coated gingerbread hearts with an apricot filling. So addictive – every time I shop at the supermarket I seem to end up with a bag – or three – of these. There is also a touch of the exotic about this pud, the cake making it something of a Jamaican trifle recipe.
Using Jamaica ginger cake and gingerbread men gives flavour to this Christmas dessert without requiring any stem ginger or ground ginger. As you buy the cake and cookies ready made, there’s no need for baking paper – nor to measure out golden syrup, unsalted butter, caster sugar and the like. Unlike other trifle recipes, there is also no vanilla custard, as Angel Delight is used instead.
I love the flavour combination of apricot, ginger and chocolate, so came up with this gingerbread trifle dessert. It’s ideal for anyone seeking alternative desserts for the festive season. This is very simple to make and easily feeds a crowd. Or just a few of you. Repeatedly. To make a smaller one, just halve all the quantities and follow exactly the same steps.
Makes one large trifle (serves about a dozen)
Gingerbread trifle ingredients
- McVitie’s Jamaica ginger cake, 1
- Orange jelly, 2 packs (blocks)
- Apricot halves, 1 tin, drained
- Angel Delight, chocolate, 3 packs
- Milk, 900ml (for the Angel Delight)
- Extra thick double cream, 600ml
- McVitie’s mini gingerbread men, 2 packs (50g)

How to make Orange and Ginger Trifle
- Cut the ginger cake up into thick slices, then place these in the bottom of a large glass trifle bowl. Make the jelly according to pack instructions, then pour this over the cake. Add the fruit and refrigerate overnight until the jelly is set.
- In a large bowl, make up the angel delight with the milk, according to pack instructions. Pour this onto the set jelly.
- When the angel delight has set, gently spoon the cream onto the top of the trifle, then use a spatula to shape a nice, smooth layer.
- Carefully place the gingerbread men on the top to decorate.
