I’d been meaning to make a bacon or ham and egg fried rice for ages, and finally got round to it with some leftover ham from slow-cooking a piece of gammon. Sometimes I make a ham and asparagus risotto with it, but this time I decided to finally try making fried rice with those microwaveable pouches you can buy everywhere.

Doing that saves pre-cooking the rice, so this is made from scratch in minutes. All you need is a hot wok and a frying pan. The latter is for frying an egg each to sit on top. This is something I got into many years ago in Bali, when Nasi Goreng always came with a fried egg on top. I add it to my chorizo risotto too.

Rather than a simple recipe for fried rice with egg, this adds ham and peas into the mix. A bit like ham, egg and chips, but with rice instead of potato. A few extra flavours are thrown in too to give it an Asian twist, namely ginger, garlic, chilli and of course soy sauce.

This fried rice with egg and ham can be made in about ten minutes. Assemble the short list of ingredients before you get started, then you can just add things in and keep stirring. You don’t have to add the egg on top, of course, that’s just my way.

This egg and ham fried rice serves 2 to 3 as a main, or 4 plus as a side

Ham and egg fried rice ingredients

  • Sesame oil, for frying
  • Eggs, 2, beaten
  • Frozen peas, 100g
  • Long grain rice, 2 pouches
  • Ginger paste, 1 tsp
  • Garlic paste, 1 tsp
  • Chilli flakes, 1 tsp
  • Soy sauce, 2 tbsp (or to taste)
  • Ham, 4 – 6 thick slices, cubed
  • Eggs, 1 per person, to fry for the top (optional)

How to make fried rice with ham and egg

  • Heat a splash of sesame oil in a wok, then add the two beaten eggs. Stir-fry quickly until they’re scrambled, then add the frozen peas and rice. Stir, then add the ginger and garlic pastes, chilli flakes, soy sauce and ham.
  • Cook over a medium heat, stirring often, until everything is piping hot and well combined.
  • If you like, fry an egg per person in the meantime and serve on top of the fried rice.

Serve this egg and ham fried rice immediately.
