You can make this King Prawn Singapore noodles recipe with or without the seafood, so it can be suitable for vegetarians or those on special diets as well as pescatarians. If you want a lip-smackingly tasty dinner on the table in 10 minutes – and you like a bit of spice – then this one’s for you. Noodles with prawns or not, the choice is yours.

I’ve used frozen King prawns, but you could use smaller ones, or omit them altogether for a tongue-tingling veggie feast. You could also throw in some extra quick-cook vegetables – like thinly sliced pepper, courgette and/or carrot – in place of the prawns. Some recipes do contain red pepper, spring onion or yellow pepper, for instance.

Traditional or takeaway style versions of this food are often made with fine vermicelli noodles, so I just use the thinnest wheat or rice noodles I can get. The straight-to-wok type are the quickest to cook. You can use light soy sauce if that’s what you have, but the flavour is not quite as rich.

  • Sesame oil, for frying
  • Eggs, 2, beaten
  • Beansprouts, 1 pack
  • Peas, frozen, 100g approx
  • Button mushrooms, 8, thinly sliced
  • King prawns, raw & frozen, 12 approx
  • Dark soy sauce, 2 tsp
  • Curry powder or paste, 1/2 tsp
  • Turmeric, 1/2 tsp
  • Red chilli flakes, a pinch
  • Noodles (straight to wok), 1 pack

How to make this spicy Singapore noodles recipe

  • Over a high heat, add a splash of oil to the wok. Once this is hot, add the eggs. Stir fry until set. 
  • Then add the beansprouts & stir fry for about a minute. Then add the peas, the mushrooms, then the prawns (alternatively, add later with the noodles if using cooked – pink – prawns). Stir fry for a minute or two, to cook and mix together, adding the soy sauce and spices as you go.
  • Finally, add the noodles and stir fry for about 2 more minutes (or according to pack instructions).

Serve these spicy prawn noodles immediately.
