Attending the Highcliffe food festival, where I bought some proper, handmade, crumbly fudge. We all loved the Nutella version, so I looked up some recipes to make it at home. The Nutella fudge recipes I found were made on the stove, but I fancied making things easier.

So I had a go at using the microwave – and it turned out very well. No baking or stovetop required. Hence this microwave Nutella fudge recipe. It’s the perfect recipe for those who would love to eat Nutella straight from the spoon… although I’m not claiming that this is a proper, old-fashioned kind of fudge. It’s not like that – but it is delicious!

The key here is to be prepared. Get all the ingredients weighed and prepared first. Break the chocolate into pieces, open the condensed milk can, weigh and slice or cube the butter, and weigh out the Nutella. Once you start, there’s little time to stop. You need to work very quickly when making this.

This recipe for Nutella fudge with condensed milk and Nutella has just two other ingredients – mleted dark chocolate and butter. They both give it depth as well as creaminess. If you fancy trying Nutella fudge with sea salt, I’d sprinkle some over the top before chilling. That way anyone eating the fudge can easily scrape it off if they don’t like the contrast. Nutella Fudge ingredients

  • Dark chocolate, 200g
  • Butter, 50g
  • Condensed milk, 1 can (397g)
  • Nutella, 300g

Equipment

  • Baking tray or dish
  • Baking paper
  • Mixing bowl
  • Tablespoon, for stirring
  • Microwave oven

How to make Nutella Fudge

  • Line a baking tray or dish with baking paper.
  • Place the chocolate (broken into squares) into large glass or ceramic microwavable bowl. Heat on high for 30 seconds to melt, then stir well. Repeat as many times as necessary, using 20 or 10 second bursts – depending on how close it is to melting – and stir well each time.
  • Once the chocolate is fully or very nearly melted, add the butter. Microwave for 10 seconds, then stir again.
  • Add the condensed milk and stir really well, then microwave for 20-30 seconds before stirring again.
  • Add the Nutella, one heaped tablespoon at a time and stirring between each addition. Once it is all mixed in, microwave the mixture for one last time for 20-30 seconds.
  • Stir really quickly, then pour straight into the prepared baking dish and spread out.
  • Chill overnight until set, then cut into squares or bars. Store in the fridge, as it can melt quite quickly.

This makes a great gift when presented in a cellophane bag and tied with ribbon.
