Refried Bean Nachos

These delicious, easy-peasy refried bean nachos are meat-free, so you could have them for Meatless Monday, or as a weekend treat. This Mexican style dish is made with refried beans, which are basically like pureed beans.
While they may look pretty unappetising, the taste is yummy. Especially when served like this, with tortilla chips and cheese.
This refried bean nachos recipe serves 4
Ingredients for refried bean nachos
- Olive oil, for frying
- Red onion, 1, chopped
- Cherry tomatoes, 12, chopped into small pieces
- Refried beans, 1 tin (about 400g)
- Lime, 1, juice only
- Coriander, fresh (or frozen) 2 tbsp, chopped
- Cheddar cheese, grated, 100g
- Tortilla chips, 1 x 200g bag

How to make Refried Bean Nachos
- Heat a dash of olive oil in a saucepan and add the onion, frying until it starts to brown.
- Add the tomatoes, beans and lime juice and stir well. Simmer for about 10 minutes, until nicely thickened. Add the coriander for the last minute or so of cooking.
- Spread some tortilla chips out on each plate. Spoon over the sauce, then sprinkle with the cheese.
- Place each plate under a hot grill for a few minutes, until the cheese is melted and the tortilla chips start to look slightly toasted.
- Serve immediately, with a bowl of extra tortilla chips. (Be careful, the plates will be hot; it’s best to have oven gloves and placemats ready.)
