This rhubarb and custard trifle recipe was actually inspired by an M&S rhubarb and custard trifle I bought from there some years back. After trying – unsuccessfully – to buy it again some time later, I forgot all about it. Then I stumbled upon a rhubarb and custard recipe for trifle torn from an old magazine.

The first time I tried it, the trifle was made for me. While it was yummy, I thought that replacing standard ready made custard with the fresh vanilla version, all whipped up with mascarpone, would elevate it to another level.

It’s still super simple to make. I don’t bother making custard for trifle when you can buy it at the supermarket. To make things even easier, this trilfe recipe with custard also uses tinned rhubarb rather than fresh.

All you need is madeira cake, a can of rhubarb, the custard and mascarpone, whipped cream and some sprinkles. It’s really just an assembly job, apart from a little light whisking and whipping.

I like to use sprinkles that echo the pink rhubarb and yellow custard flavours. But you can use any you want to, or have, such as regular hundreds and thousands or sugar strands. If there are a few pink and yellow ones in there, so much the better.

This recipe for rhubarb and custard trifle serves 6 to 8

Rhubarb and custard trifle ingredients

  • Madeira loaf cake, 1
  • Rhubarb, 1 tin
  • Vanilla custard, fresh, 1 tub
  • Mascarpone, 1 tub
  • Whipping cream, 1 carton
  • Sprinkles, to decorate

How to make rhubarb and custard trifle

  • Cut the madeira cake into slices and place these in the bottom of the trifle dish.
  • Open the tin of rhubarb. Drizzle or spoon any syrup or juice over the cake slices, before adding a layer of fruit.
  • Whisk the custard and mascarpone together until you have a thick mixture. Spread this over the rhubarb, and chill until just before serving.
  • Whip the cream and use to top the trifle. Then add some sprinkles of your choice.
