Spicy Prawn Noodle Soup

I love Thai style food, but hadn’t tried a laksa with noodles until recently. It was so easy to make, and so delicious – Mister and I now love it. This particular spicy prawn noodle soup recipe is made with Thai red curry paste.

The prawn noodle soup has coconut milk, beansprouts, spring onion, lime and coriander for a lovely fresh, zingy flavour. There is no pak choi in this version, but you could use that instead of beansprouts if you prefer. I also use soy sauce rather than fish sauce, but either will do the job well.

You could even substitute the curry paste if you like, or have, something else – yellow, green or massaman would all work here. All would make tasty Thai prawn soup recipes. You could also use rice noodles instead, but you may have cook them separately. I simply find the straight-to-wok type easier.

In short, this dish is quick to make, pretty healthy and full of fresh, spicy Asian flavours.

Spicy prawn noodle soup ingredients

  • Coconut milk, 1 tin
  • Red curry paste, 2 tbsp
  • Dark soy sauce, 1 tbsp
  • Spring onions, a few, finely sliced into rings
  • King prawns, frozen, 200g
  • Beansprouts, 1 pack
  • Noodles (straight to wok type), 1 pack
  • Coriander, 1/2 pack, leaves chopped
  • Lime, 1, in wedges
  • Chilli flakes, to serve (optional)

How to make this spicy prawn soup

  • Over a high heat, add the coconut milk, Thai curry paste and soy sauce to the wok. Bubble for a couple of minutes, then add the sliced spring onions.
  • Add the king prawns, then simmer for about 2-3 minutes. Then add the beansprouts and cook for a further few minutes before adding the noodles (you can judge their cooking time by pack instructions).
  • Once everything is cooked and heated, transfer to bowls and squeeze some lime juice over.
  • Serve this spicy prawn laksa topped with the fresh coriander and extra lime wedges.

You could also serve chilli flakes on the side of this Thai prawn soup, for sprinkling.
