My no bake cheesecakes are some of my most popular recipes, so I HAD to come up with another. Hence. this no bake Twix cheesecake. I love, love, LOVE Millionaire’s shortbread, aka caramel shortbread, and thought that the buttery shortbread, milk chocolate and caramel flavours would make a fabulous, easy dessert.

This no bake Twix cheesecake recipe requires no time in the oven and doesn’t contain gelatine, so is a complete doddle to make. Using Twix bars simplifies the whole process even more. You could chop up the Twixes for the top, scatter over the pieces and drizzle with melted chocolate for a fancier decoration. (I left them whole, simply so the kids could eat them if they didn’t like the cheesecake itself.)

Instead of the standard digestive biscuit (graham cracker) crust, I used shortbread fingers in this cheesecake. There’s no ganache or caramel sauce to make from brown sugar, and butter. Or even a can of it to contend with, as there’s plenty of caramel in the Twix bars already. This dessert takes minutes to make – but does need to chill for hours so it sets properly.

Why ask ‘where can I buy Twix cheesecake’ when this is so simple to make? Here is the easiest and best no bake Twix cheesecake. Of course I would say that! The only way to know for sure is – DO try this at home.

Makes 1 large cheesecake

Twix cheesecake ingredients

Base

  • Shortbread fingers, 300g
  • Butter, 100g, melted

Filling

  • Cream cheese, 600g
  • Extra thick double cream (heavy cream), 300ml
  • Icing sugar, 150g
  • Vanilla extract, 1 tsp
  • ‘Twix’ fingers, 6 (3 double or 6 single bars), in thin ‘slices’

Topping 

  • Twix fingers, 8 (4 double or 8 single bars)

How to make Twix Cheesecake

  • Process the biscuits into fine crumbs, then mix with the melted butter. Press into a greased springform tin, and chill while the filling is made.
  • Stir together the cream cheese, yoghurt, cream, sugar and vanilla. Once they are well combined, fold in the chopped Twix pieces. 
  • Spoon the filling onto the base, then smooth over the top with a spatula or pastry scraper. Then, run a palette knife around the edge – this makes it so much easier to remove later. Chill again for about an hour.
  • Decorate with the Twix bars – I made a union flag pattern – then press gently into the top so they ‘stick’. Chill for about 4 more hours – or leave in the fridge overnight – before serving.
