Unicorn Desserts: Trifle
Don’t be alarmed – no mythical creatures were harmed in the making of this unicorn trifle! My daughter had a pair of magical unicorn slippers, which she instantly fell in love with, to the extent that she wanted to sleep in them the first night. They inspired this; surely the princess of all unicorn desserts.
I do love dreaming up trifle recipes (and eating them, of course). So inspired by the pastel shades of the slippers, I thought I’d have go at devising a unicorn trifle. Unicorn food at its finest.
This unicorn dessert recipe is perfect for a children’s birthday party. It’s a really creamy, fluffy, nursery pudding – milk jelly, custard, Angel Delight, Dream Topping and sprinkles. Very easy, yet very effective. Serve on unicorn dessert plates for maximum impact. At a unicorn party, obviously. It’s a delicious dessert that contains no other chocolate or candy treats. So it’s not as overloaded with sugar as it could be.
What other unicorn desserts recipes are out there? I’ve seen unicorn cheesecake bars, but my little one isn’t a fan of cheesecake. Rainbow unicorn sugar cookie bars and cotton candy just sound a bit too – well, sugary. Unicorn poop cupcake cones? Really? No toilet talk at the dinner table, please! I’ve sampled unicorn ice cream, but even Missy wasn’t a fan of the bubblegum flavour. I did once bake a unicorn cake – or least a Victoria sponge decorated with pastel Smarties. Unicorn bark, unicorn macarons, unicorn cupcakes and unicorn fudge all sound nice, though – I might try one of those next…
This trifle is great for Easter, too – simply decorate with mini eggs instead of sprinkles. Lucky charms cereal or anything pastel coloured goes here. As for the layers, you can go for the purple, pink and yellow theme this is how in the main picture). Or by adding blue colouring to the custard and Dream Topping, create green and blue layers too (see the photos below to get the idea).

How to make Unicorn Trifle
- Make up the jelly as per pack instructions, using the kettle method rather than the microwave. By that, I mean make up the first stage with 285ml (or amount specified on pack) boiling water. Allow this to cool for around an hour until it reaches room temperature (this is crucial, to prevent curdling). Then make up the second half of the liquid with milk, instead of cold water. Give it good whisk, and any initial curdling should soon settle.
- Add a drop (or tiny squeeze, if using gel) of blue food colouring. Whisk the jelly really well, then check the colour. Repeat the process, as required, until your jelly is a nice pale purple colour – not too pinkish, as it will look too similar to the pink Angel Delight. The idea is to achieve a distinct pastel purple shade.
- Give the milk jelly a final whisk – you want it to be light and fluffy – then pour this into the trifle dish and chill for a few hours, or overnight, until the milk jelly has completely set.
- Tip the custard into a bowl. Either, leave it yellow – or, as before, add blue food colouring in stages until you get a nice, pastel green shade. Slowly pour this over the jelly layer and smooth the top with a spatula. Chill for 10 minutes (or more).
- Make up the Angel Delight as per pack instructions, whisking really well, then carefully pour this over the custard and chill again for 10 minutes.
- Make the Dream Topping. Again, either leave the colour as it is, or add a drop at a time of blue colouring, as before, until you have a lovely pastel blue. Pour this final layer on to top the trifle then refrigerate again for at least 10 minutes.
- Finally, top with co-ordinating sprinkles of your choice – I used hundreds & thousands – and chill until serving.
