Chorizo has been a rising star on the culinary scene for a number of years now, much-loved for the distinctive, rich and smoky flavour it adds to dishes. Like bacon, you don’t necessarily need to use a lot of it to make a big impact. This Spanish chorizo and chicken stew, made as a slow cooker recipe, is also very versatile. It can be served with all sorts of sides.

We’ve found it to be equally yummy with rice, pasta, mash, wedges, sweet potato chips, crusty bread or even noodles – try anything with it that takes your fancy! As well as the meat, this dish is packed with chickpeas and vegetables, so it’s almost as good for you as it tastes. I used chicken breasts rather than chicken thighs too, as I do in most recipes. The former are lower in fat.

Throw this together in the morning, and come dinner time you’ll have a slow cooked meal ready and waiting. A delicious slow cooked chicken and chorizo casserole, no less. That should please the family – and free up your time!

Serves 4

Ingredients

  • Chorizo, 75g, diced
  • Onion, 1, diced
  • Orange pepper, 1, diced
  • Chicken breast, 2, diced
  • Chickpeas, 1 tin, drained
  • Chopped tomatoes, 1 tin
  • Tomato puree, 1 tbsp
  • Chicken stock, 1 pot or cube, made up with 100ml boiling water
  • Garlic, 2 cloves, crushed
  • Chilli flakes, a pinch
  • Black pepper, fresh or coarse ground, a pinch
  • Rosemary, dried, a pinch
  • Thyme, dried, a pinch
  • Parsley, dried, a pinch
  • Baby button mushrooms, about 8, quartered (optional)

How to make Chicken and Chorizo Stew in the slow cooker

  • Fry the chorizo (without any olive oil, it will fry nicely in its own fat) for a few minutes, stirring, until it starts to cook. You can do this in your slow cooker pot if it can be used on the hob. Otherwise use a saucepan. Add the onion and pepper and stir-fry until they start to brown.
  • Add the chicken. Stir as it is cooking until turning golden.
  • Put all the other sauce ingredients into the pot and stir well. Slow cook for about 6 hours on medium.

Serve this slow cooker chicken and chorizo stew with any accompaniment you like.
