I love Mexican style food and chilli, so it follows that this chicken fajita rollup recipe will also be a favourite dish at dinner time. While I’m not too keen on raw or chunks of lightly cooked peppers, I love them when they’re served like this – cut into fine strips and then cooked until they start to blacken.

If you’ve ever wondered how to make fajita sauce, then just follow this simple chicken fajita recipe. Sour cream or creme fraiche are combined with lemon juice and spices to form the fajita marinade. Then it’s just an easy matter of stir-frying before serving as a chicken fajita wrap with cheese and more creme fraiche or sour cream. Chicken fajita rollups, done. I just lay out the wrap, spread some filling over, sprinkle on some cheese, dollop on sour cream or creme fraiche and roll up to eat. Delicious dinner made easy.

Using one green bell pepper and one red bell pepper, as pictured, does look really good. But if you prefer orange or yellow bell peppers, do feel free to use those sweeter ones. Turkey strips can be used instead of chicken breast for this chicken fajita roll recipe if you like – it makes so little difference. In fact the pre-sliced packs of turkey breast strips are ideal for recipes like this.

Chicken Fajita rollup recipe ingredients

  • Olive oil, for frying
  • Chicken breasts, 4, sliced into thin strips
  • Red onion, 1 sliced into thin strips
  • Pepper, 2 sliced into thin strips (any colour you like, or have)
  • Creme fraiche or sour cream, 2 tbsp (plus extra to serve, see below)
  • Lemon, 1, juice only
  • Chilli powder, 1/2 tsp
  • Chilli flakes, a pinch
  • Cumin, 1 tsp
  • Oregano, 1 tsp
  • Paprika, 1 tsp

To serve

  • Tortilla wraps, 8
  • Creme fraiche or sour cream, remainder of tub (usually 200-300ml)
  • Cheddar cheese, about 150g, grated

How to make this easy chicken fajita recipe

  • To make the chicken fajita marinade, mix the creme fraiche, lemon juice, herbs and spices together in a bowl. Add the turkey or chicken, mix, and leave to marinate in this fajita seasoning for at least 30 minutes.
  • Stir-fry the poultry, in a dash of olive oil, until it starts to brown. Add the onion and peppers and continue stir frying until the vegetables have softened and browned and the meat is cooked through. This should take about 10-20 minutes, depending on the heat and how thinly sliced the ingredients are.

Serve the cooked chicken fajitas filling with flour tortillas, creme fraiche and shredded cheese, so everyone can create their own chicken fajita roll. You may want to add some freshly ground black pepper, too.
