Chipotle Chicken Tray Bake
I do love a tray bake, don’t you? Just chop the veg, add some oil and seasoning and bung it all in the oven until Alexa lets me know it’s time to eat. Hot on the heels of my chorizo tray bake with rice, beans and peppers and a simple all-in-one sausage roast is this chipotle chicken tray bake with Mexican flavours.
Making this easy chipotle chicken recipe is simply a matter of slicing up a few vegetables and doing minimal mixing before letting your oven do the legwork. Despite that, it’s packed with flavour – plus lots of goodness from the roasted pepper, onion, sweet potato and lean poultry.
I love this chipotle chicken bake served with a dollop of smooth creme fraiche, plus a sqeeze of zesty lime. A feast for all the senses as well as the stomach. It makes a nice change from chilli con carne too – not that I could ever tire of eating that!
If you are more organised than I am and have time to prep ahead, marinating the chicken earlier in the day won’t do any harm – and in fact is highly likely to make it even more delicious.
This is the best way to cook peppers and onions, in my book: oven roasted until they become rich in flavour, super soft in texture and slightly charred around the edges. Utterly delectable, in other words.

Chipotle chicken tray bake ingredients
- Red onion, 1 large, sliced into half-moons
- Pepper (any colour), 1, sliced into thin strips
- Sweet potato, 2, cut into chips (leave skin on)
- Cumin seeds, 1 tsp
- Ground cumin, 1 tsp
- Olive oil, 2 tbsp
- Salt, a pinch
- Chicken breasts, 2 (whole)
- Chipotle paste, 2 tsp
- Soy sauce, 1 tbsp
- Smoked paprika, 1 tsp
- Creme fraiche, to serve
- Lime, 1, cut into quarters, to serve

How to make this chilli chicken tray bake
- First, pre-heat the oven to 180 degrees fan (or equivalent). Prepare the vegetables as directed, then add the olive oil, salt and cumin powder and seeds to a bowl. Toss in the veg and mix up well to coat with the oil. Transfer to the baking tray. Once the oven’s hot, pop this tray into the oven and bake for about 15 minutes.
- Meanwhile, make the marinade and add to the chicken. To do this, combine the chipotle paste, paprika and soy sauce in a bowl. Then add the chicken and stir well to coat it all over.
- Once the vegetables have been roasting for 15 minutes, add the chicken to the tray and return it to the oven. Bake for around 20 to 25 minutes more, or until the meat is cooked right through.
