These are my latest food discovery and oh, so tasty. Dirty fries are very easy to make, especially because you can top them with about anything – they are leftovers’ best friend. This dirty chips recipe uses bacon and BBQ sauce flavours, and is so simple. You can quickly fry up the topping while your chips bake in the oven. Just don’t ask me how healthy these are…

On my previous blog, this was my all-time number one post. That’s just how popular these fries are! There’s sweet, caramelised onions that contrast against salty bacon, the tang of barbecue sauce, and the oozing, melted cheese topping.

French fries are stated, but you can use any kind of chips – chunky ones, crinkle cut or curly, for example. You could even use wedges or sweet potato fries instead. I use dark muscovado sugar, but lighter brown or even ordinary granulated sugar will do the job pretty well if you haven’t any brown sugar.

The fries make a great weekend treat – and are just the right sort of food for soaking up the alcohol either during or after a night of indulgence. You can of course make topped chips with just about any topping you like – chilli, gravy and curry sauce are other popular examples.

Serves 2-4 (as a main or side)

Dirty Fries Ingredients

  • French fries, 1 pack (about 900g)
  • Smoked streaky bacon, about 8 rashers, chopped
  • Red onion, 1, sliced into thin strips
  • Soft brown sugar, 2 tsp
  • BBQ sauce, 2 tbsp
  • Cheddar cheese, about 100g, grated

How to make Dirty Fries

  • Cook the fries in the oven according to pack instructions.
  • Meanwhile, fry the bacon gently (no oil is required), stirring, until it starts to release the fat.
  • Add the onion and fry with the bacon, stirring, for a few minutes.
  • Add the brown sugar and BBQ sauce, then continue to cook the mixture on a low heat, stirring often.
  • When the fries are ready, transfer them to a serving bowl, then top with the bacon mixture.
  • Top with the grated cheese and return to the oven – or grill – for a few minutes, until the cheese has melted on top.
