Minced Beef Noodles
This minced beef noodles recipe is a bit of a fusion dish. It’s kind of like a homemade Chinese beef chow mein, but the addition of Sriracha and Kecap Manis sauces plus lime and coriander bring Thai-style flavours into the mix.
These beef mince noodles are really quick to make, as long as you cut the carrot into the smallest, thinnest sticks possible. To be honest I don’t normally use frozen mince, but it works so well here as the texture is just right with the noodles. Half a bag is usually 250g, so there’s some left for next time.
If you don’t have quite the right sauces for this beef mince noodle stir fry it doesn’t really matter. Use soy sauce in place of Kecap Manis, or use all sweet chilli or Sriracha sauce instead of some of each. It won’t make a huge difference and will still be yummy! Likewise, fresh garlic or ginger is fine to add in place of the pastes.
This minced beef and noodles dish is also flavoured by a couple of the ingredients added at the end – coriander and lime. I add the coriander before the end of cooking, but you can scatter it over the top if you prefer. As for the lime, wedges served on the side to squeeze over gives these beef mince stir fry noodles a Pad Thai type twist.

Minced beef noodles ingredients
- Sesame oil, for frying
- Shallot, 1, chopped finely
- Carrot, 1, cut into matchsticks
- Frozen beef mince, 250g
- Garlic paste, 1 tsp
- Ginger paste, 1 tsp
- Rice vinegar, 2 tbsp
- Kecap Manis, 2 tbsp
- Sriracha sauce, 1 tbsp
- Sweet chilli sauce, 1 tbsp
- Chilli flakes, a pinch
- Mushrooms, a few, sliced
- Noodles, straight-to-wok type, 1 pack
- Coriander, fresh, a few stems, chopped
- Lime, 1, cut into wedges, to serve

How to make beef mince noodles
- Heat the wok, then add a dash of sesame oil and swirl it around the pan. Add the shallot, carrot and frozen beef mince, then stiry fry for a few minutes until the meat starts to brown.
- Add all the other ingredients except the noodles, coriander and lime, and stir well to combine before cooking for a few more minutes, stirring often.
- Add the noodles and cook for as long as the pack directions state.
- You can stir in the coriander just before serving or scatter it over the top.
Serve this beef mince noodle recipe with lime wedges on the side.
