This Asian-style recipe makes Thai turkey mince noodles that are packed with flavour – and are pretty nutritious to boot. Loosely based on a Pad Thai, this dish takes lean poultry plus fresh vegetables and stir-fries them in a delicious, spicy, salty sauce.

Thai turkey mince noodles ingredients

  • Sesame oil, for frying
  • Turkey mince, 250g
  • Carrot, 1, in thin sticks
  • Red curry paste, 1 tbsp
  • Sweet chilli sauce, 1 tbsp
  • Soy sauce, 1 tbsp
  • Sriracha sauce, 1 tsp
  • Mange tout, 1 pack
  • Noodles, straight-to-wok type, 1 pack
  • Lime, 1, in wedges
  • Chilli flakes, 1 tsp
  • Roasted salted peanuts, chopped, 20g

How to make this Thai mince recipe with noodles

  • Add a dash of sesame oil to a hot wok, then add the mince and carrot. Stir-fry for a few minutes until the carrot starts to soften and the mince starts to brown.
  • Add the curry paste and sauces to the wok and stir well, and keep stir-frying until the mince is cooked through.
  • Then add the mange tout. Cook for a minute or so before adding the noodles (as per pack instructions). Continue cooking and stirring until everything is piping hot and well combined.

Serve with the lime, chilli flakes and peanuts on the side.
