Mojito Mocktail Syrup + ‘Gin’ & Rosemary

There are a number of other reasons why you might be avoiding alcohol – pregnancy, medication or religion. Perhaps it’s about time you took a turn as designated driver. Or you may be doing Sober October or dry January. Whatever the reason, this ‘gin’, rosemary and mojito mocktail syrup recipe will liven things up when it comes to soft drinks.

You don’t have to sip a boring old glass of fizzy pop or juice. These sugar syrups are so simple to make and really pack a sophisticated flavour punch to make a cocktail look, smell and taste for more like the real thing. I made every mocktail syrup at the same time, though there’s no need to. Pick your favourite and get infusing!

Mojito mocktail syrup ingredients

  • Sugar – in the same quantity as water (see below)
  • Water – in the same quantity as sugar

‘Mojito’ mocktail syrup

  • Lime, 1, in chunks
  • Mint, 1 stem

‘Gin’ mocktail syrup

  • Juniper berries, dried, 2 tsp
  • Lemon, 1,  in chunks
  • Rosemary, a few needles

Rosemary mocktail syrup

  • Rosemary, 1 stem

How to make your mocktail syrup

  • Add equal amounts (by volume) of sugar and water to a pan. I used a jam jar to measure, so I used 3 jam jars of water and 3 of sugar – 1 for each syrup.
  • Heat the sugar and water until small bubbles start to appear. Turn the heat down and simmer very gently for about 15 minutes.
  • Meanwhile, add the ingredients to each container – you need a clean container for each syrup – I used sterilised jam jars.
  • After the sugar syrup has simmered, pour an equal quantity into each container.
  • Give each one a good shake, then leave to infuse for at least 15 minutes before straining to remove the added ingredients. You can leave the juniper berries in the ‘gin’ syrup, though.
  • Use for mocktails, or cocktails – ‘gin’ syrup and tonic, ‘mojito’ syrup with soda, fresh lime and mint, or the rosemary is lovely with pink grapefruit juice and soda.
