Slow Cooker Chili con Carne
I’ve been honing my beef chilli recipe since my student days, when I very first learned to cook. This slow cooker chili con carne recipe has thus been decades in the making. I hadn’t done any cooking before I left home, really, so I was very much self-taught when, after a year of living on tins and packets (or rather the contents thereof), I finally shared a kitchen with 2, rather than 11, other girls.
Mince-based meals were very much what my early cookery days were all about. Chilli was my grandmother’s favourite go-to food when catering for the family. Now, I make it as a chilli con carne slow cooker recipe.
I use passata rather than chopped tomatoes as it’s smoother, but you can use a tin if you want to. Other recipes do – it’s simply a slight preference and won’t make a huge difference. I would recommended adding an extra tbsp tomato puree in that case, however. If you want to, feel free to throw in a couple of cloves of garlic, too.

Slow Cooker Chili con Carne ingredients
- Olive oil, for frying
- Minced beef, 500g
- Red onion, 1, chopped
- Red pepper, 1, chopped
- Passata, 1 carton (500g)
- Red kidney beans, 1 tin, drained
- Baked beans, 1 tin
- Tomato purée, 1 tbsp
- Beef stock pot or cube, 1
- Chilli powder, 1/2 tsp
- Chilli flakes, a pinch
- Ground cumin, 1 tsp
- Oregano, dried, 1 tsp
- Paprika or smoked paprika, 1 tsp

How to make this easy Slow Cooker Chilli con Carne recipe
- Fry the onion and pepper in a dash of olive oil until they start to soften. You can do this in a saucepan – if your slow cooker doesn’t have a removable cooking pot.
- Add the mince and cook, stirring often, until the mince has broken up and browned. You can make slow cooker chilli con carne without browning the mince, but I like to as it adds a delicious meaty, caramelised depth of flavour.
- Add all the other ingredients to the slow cooker pot and stir well. Cook on the low heat setting for about 6 hours, or as per your slow cooker’s instruction manual.
Serve this slow cooker beef chilli with rice and tortilla chips. You could also add soured cream or guacamole if you like. Don’t forget the freshly ground black pepper, too!
