Slow Cooker Moroccan Tagine with Beef

I’d not made a slow cooker Moroccan tagine before – nor in fact any other kind. Then we but had a North African style beef tagine made for us when visiting family, and it was one of the best meals I’d had in a while.

Now we’re back at home, I had to have a go at devising my own recipe – made as a tagine in the slow cooker simply because I don’t have a proper tagine pot. Perhaps I’ll invest in one. Not that I really need to, but they do look very pretty…

Traditionally preserved lemons are used in Moroccan tagine recipes, but I found the fresh citrus fruit worked fine. It saves buying them especially. You can add some ground cumin if you like – and have some. A teaspoon or less will do. It isn’t at all necessary and simple a matter of personal taste. The fruit, almonds and harissa give this plenty of flavour. Salt is not needed, due to the addition of stock.

Slow cooker Moroccan tagine with beef ingredients

  • Olive oil, for frying
  • Stewing steak, 500g, diced
  • Red onion, 1 large, finely chopped
  • Peppers, 2, 1 green & 1 red, diced
  • Carrot, 1 large, diced
  • Passata or chopped tomatoes, 1 carton or can
  • Chickpeas, 1 tin, drained
  • Harissa paste, 2 tbsp
  • Beef stock pot or cube, 1
  • Button mushrooms, 4-6, quartered
  • Dried apricots, 8, quartered
  • Flaked almonds, 2 tbsp
  • Lemon, 1/2, sliced (& pips removed)

How to make Slow Cooker Moroccan Beef Tagine

  • Place the slow cooker dish on the hob (if you can, otherwise use a saucepan for this step) and add a dash of olive oil. When the oil is hot, add the beef and fry, stirring, until nicely browned.
  • Add the onion, peppers and carrot and cook for a few minutes, stirring, until they start to soften.
  • Remove the pot or pan from the heat and transfer to the slow cooker. Add all the other ingredients and stir well.
  • Slow cook on Low for about 6 hours’ cooking time. Remove the lemon slices, then serve.

Serve with couscous, rice or roast potatoes.
