This smoky guacamole recipe is so simple that I feel a little fraudulent calling it a recipe, really! All you do is mash an avocado with a few flavours, so it’s ideal for having mashed (rather than smashed) avo on toast.

The very best guacamole recipe (for me, anyway) works so well as a dip for tortilla chips, or when served as a side with chilli or indeed any Mexican style dish. Or use it to top sourdough toast for a snack or light meal that’s as nutritious as it is delicious.

My in-laws once phoned from London, while they were visiting a friend there, to request this easy guacamole recipe. Given that two of the party once taught cookery classes, I was honoured!

The lime, smoked paprika and some freshly ground salt and pepper are the only essential ingredients in this basic guacamole recipe. Use unsmoked paprika if you prefer. The cherry tomato isn’t necessary but adds a little extra colour and texture. Don’t buy any specially though, as you only need one!

This quick guacamole recipe is meant to be rather rustic. I’m not keen on a smooth guacamole personally, as it looks factory made and isn’t as tasty to me. The only thing you need to make sure of is that the avocado is ripe.

To make more of this simple guacamole recipe, just multiply the quantities by the number of avocados. The following instructions make a dip-sized amount – or a small bowlful.

  • Avocado, ripe, 1
  • Lime, 1/2, juice only
  • Cherry tomato, 1 (optional)
  • Smoked paprika, 1/2 tsp (or to taste)
  • Salt & pepper, freshly ground

How to make this chunky guacamole recipe

  • Halve the avocado, then scoop out the flesh. Mash this with a fork, scrape it into a bowl, and mix.
  • Finely chop the cherry (or plum) tomato, if using, and add to the bowl. Stir again.
  • Squeeze over the juice of half a lime and sprinkle over the smoked paprika. Grind some salt and pepper over this and stir well to combine.

Serve this fast guacamole recipe as a side with chilli or other Mexican dishes, as a dip for tortilla chips, or on toast.
