Nutty Rocky Road
I have to say at the outset – why would you ever buy rocky road? It’s the easiest sweet treat ever to make. There are lots of other recipes I’ve posted that preceded this, but this nutty rocky road represents the first time I’ve put nuts in rocky road or tiffin.
The formula for making tiffin like this is so simple. Combine some sort of biscuit with other sweet treats and chocolate. It’s just a case of some light chopping, melting and stirring. Then chill before eating. This is kind of an adult rocky road, but kids wo like nuts love it too. Make it more to the taste of either by option for plain or milk chocolate – or use half of each as I did with this batch.
If you want neat pieces of peanut butter rocky road, perhaps this isn’t the recipe for you. Slicing it up is really more of a case of hacking at it with a knife to splinter it into shards. To me, the variation in the shape and size of the pieces is all part of the appeal, but feel free to disagree.
Remove from the fridge a while before cutting in any case – it does make the task easier. Even if doesn’t make the end result any more equal in terms of size or shape. The time required to soften depends on the room temperature. Instead of sprinkles, you could use finely chopped hazelnuts, peanuts or almonds to top this if you prefer.
Nutty Rocky Road ingredients
- Milk or dark chocolate, 400g
- Peanut cookies, 1 pack (about 200g)
- Snickers, 2 bars
- Topic, 2 bars
- Sprinkles, to decorate

How to make rocky road with nuts
- First, get prepared. Break the chocolate into squares and place in a large bowl. Slice up the peanut cookies, Snickers bars and Topics so you have small pieces of each. Line the ceramic dish with a piece of baking parchment or greaseproof paper.
- Melt the chocolate. I do this – successfully – in the microwave. After an initial 30-second blast followed by a good stir, I keep microwaving for 10 seconds at a time, stirring again after each, until melted. Once it’s almost there, let the residual heat melt the rest as you keep stirring.
- Once the chocolate is thick and smooth, tip in all the chopped biscuit and chocolate bar pieces and mix thoroughly.
- Transfer to the lined dish and smooth over, before adding sprinkles on the rocky road surface.
- Chill in the fridge for about an hour – or more. Remove a while before cutting to soften.
Serve as a dessert, snack or sweet treat at any time.
