Cherry Ripe Slice | No Bake

My favourite Australian chocolate bar inspired this easy Cherry Ripe slice, or no bake cake. I miss those a lot (I’m English but lived over there for a while). So I devised this for when my Antipodean cravings strike. Being given a free Cherry Ripe on Christmas Day was one of the highlights of the one festive season I’ve spent down under!

I also remember a friend from school whose mum used to make a similar thing. That was based on a long-gone British chocolate bar – the Cabana. Now, I can barely remember those, but they were definitely delicious and very coconutty, too. They also contained cherries and caramel.

Previously I had made a similar no bake cake based on recipes I found online, but it was more fiddly. That one involved ingredients like sweetened condensed milk, desiccated coconut, coconut oil or cream and red food colouring. This cherry slice recipe is so easy in comparison – I don’t even use my food processor. There’s very little prep time at all – simply chop, melt, mix and chill.

All of my no bake cake recipes began with Rocky Road – which I also first sampled during my year Down Under. Cherry Ripe is pink inside, but adding red or pink food colouring to this no bake cherry and coconut slice wouldn’t really work, mainly because there’s no baking with this recipe.

Makes 12-24 pieces, depending on size

Cherry Ripe Slice recipe ingredients

  • Dark or milk chocolate, 400g (I often use 50/50)
  • Nice biscuits, 100g, broken or chopped into small pieces
  • Bounty bars, 3 (double), sliced thinly
  • Glacé cherries, 100g 
  • Rice Krispies, 25g

How to make Cherry Ripe Slice: no bake

  • Line a suitable square or rectangular dish with a sheet of greaseproof baking paper.
  • Melt the chocolate. I do this in the microwave in short bursts, stirring often, & it always works fine. I start with a 30 second burst, then 20, then 10 – if needed. Once there are few lumps left, remove and keep stirring while the remaining heat does the trick.
  • Stir the biscuit pieces, Bounty slices, cherries, and Rice Krispies into the melted chocolate. Place the mixture into a dish, smooth over, then refrigerate to set.
  • If possible, remove from the fridge for a while to soften a little before cutting. A knife warmed in a jug of hot water is best for this. Slice into bars or squares, then chill again until ready to eat.

This choc cherry slice is great as a treat anytime!
