Sausage and Sweet Potato Tray Bake

I’d seen lots of recipes for sausage and roasted vegetables, and – eventually – I got around to testing this easy sausage and sweet potato tray bake recipe. Missy loves sausages, but isn’t so keen on other meat, so this traybake dish seemed ideal. In my experience, sausage recipes are great for feeding children.

I went for sweeter vegetables to tempt her, too; hence the sweet potatoes, squash and carrots. Even the red onion becomes meltingly soft and mellow after 40 minutes in the oven. Including prep & pre-heating, you can have this sausage and roast veg on the table in an hour, which isn’t half bad for a roast dinner.

This sausage and sweet potato recipe gives 2 sausages per serving, so if you want 3 or more simply add more. If you’re not adding a side dish you could add more veg, or make double by multiplying the ingredients by two and using two baking tins. This dish makes a delicious and different main to serve over the Christmas period, too.

Ingredients for sausage and sweet potato tray bake

  • Sweet potato, 1, peeled & in chunks
  • Butternut squash, 1, peeled & in chunks
  • Carrot batons, 1/2 a pack
  • Olive oil, 1 tbsp
  • Salt & pepper
  • Red onion, 1, peeled & in wedges
  • Sausages, 8
  • Sage, 2 stems (optional – or use Rosemary or Thyme)

How to make this this sausage and sweet potato bake

  • Preheat the oven to 180 degrees fan, or equivalent.
  • Put the potato and squash chunks and the carrot batons into a large bowl and add the olive oil and some salt and pepper. Mix well to coat the vegetables in the seasoned oil.
  • Tip the veg into a large roasting tin. Add the sausages, onion and herbs (if using) and spread everything out.
  • Cook for about 40 minutes in the oven, turning the sausages and vegetables halfway through if you can.

Serve with gravy – & my cheat’s Cauliflower & Broccoli Cheese
