This turkey mince pasta bake recipe is kind of a turkey bolognese pasta bake, but with a twist. Since sweet chilli goes so well with chicken and turkey, I decided to give it a subtle hint of that flavour, for a twist on the usual turkey mince pasta bake recipes.

So it contains red pepper and chilli flakes, plus Kecap Manis. This is a Malaysian concoction that’s like a thick, syrupy version of soy sauce. It’s one of my recent discoveries – along with Sriracha chilli sauce. In fact you could add a small dash of that too if you like some heat and have some handy.

A bit of a fusion dish, then. What’s really great about using turkey mince in this kind of recipe is that it’s not at all dry. Just delicious. As this lean poultry is pretty good for you too, I’m always looking for new ways to use it.

This healthy turkey pasta bake could also be made as a stand-alone turkey mince pasta sauce – in fact that was the idea at first until I thought about how much I love the combination of sweet chilli and cheese. Is there any better comfort food than a cheesy mince pasta bake – with a slightly spicy twist?

Turkey mince pasta bake ingredients

  • Olive oil, for frying
  • Red onion, 1, chopped
  • Red pepper, 1, sliced thinly
  • Passata, 1 carton
  • Tomato puree, 1 tbsp
  • Kecap Manis, 1 tbsp
  • Basil, fresh or dried, 1 tsp or a few leaves, chopped
  • Bay leaf, fresh or dried, 1
  • Chilli flakes, a pinch
  • Pasta, 350g
  • Mozzarella, 1 ball
  • Cheddar cheese, grated, 100g

How to make this turkey & tomato pasta bake

  • Heat a dash of olive oil in a saucepan, then add the chopped red onion and sliced red pepper. Stir-fry for a few minutes until they start to cook.
  • Add the passata, tomato puree, kecap manis sauce, herbs and chilli flakes and stir well. Simmer while you cook the pasta, as per pack instructions.
  • When the pasta’s ready, drain then tip into the baking dish. Add the turkey mince pasta sauce and stir well to coat the pasta in the sauce.
  • Slice or tear the mozzarella and use to top the turkey pasta bake along with the grated cheddar.
  • Bake at 180 degrees fan for about 15 to 20 minutes, when the cheese has melted and the topping looks crispy.

Serve this turkey mince bake as it is, or with salad and crusty or Italian-style bread.
