The flavours in this Christmas tiffin recipe are very evocative of mince pies – although there aren’t any actually in it. Waitrose used to sell a chocolate and ginger mince pie that my friend and I adored. Last time I looked they didn’t sell them any more, alas, but they did inspire this creation. I use shortbread rather than digestive biscuits here, as that’s what mince pie pastry recipes are often based on.

This Christmas chocolate tiffin is great when served during December, as it combines mince pie with chocolate flavours. As for after the big day – if you’re looking for a recipe to use up leftover Christmas chocolate, then this fridge cake surely has to be it. There’s no baking needed, either.

Makes 12-24 pieces, depending on size

Christmas Tiffin recipe ingredients

  • Dark or milk chocolate, 300g (I often use 50/50)
  • Chocolate orange, 1 (milk or dark)
  • Shortbread fingers, 1 pack (about 200g), chopped into small pieces
  • Mixed dried fruit (with peel), 150g
  • Ginger, 1 level tsp
  • Cinnamon, 1 level tsp
  • Mixed spice, 1 level tsp
  • Sprinkles, to decorate

How to make Christmas Tiffin

  • Line a suitable square or rectangular dish – I use a ceramic lasagne dish – with a sheet of baking parchment.
  • Melt the chocolate ( I do this in the microwave in short bursts, stirring often, & it always works fine. I start with a 30 second burst, then 20, then 10 – if needed).
  • Stir the shortbread pieces, dried fruit and spices into the melted chocolate and mix well. Press the mixture into the lined dish.
  • Decorate with sprinkles of your choice – I opted for colourful stars. Then chill until set – this takes about an hour.
  • If possible, remove from the fridge for a while to soften a little before cutting (with a knife warmed in a jug of hot water is best) into bars or squares, then chill again until ready to eat.

Serve this chocolate and fruit tiffin as a simple dessert or snack
