I’m calling this a firework cake recipe, but it’s great – and super easy – to make at any time of year. Simply melt some chocolate, stir in a few ingredients and chill. Job done. It’s basically what is often called a rocky road, tiffin or fridge cake.

I decorated this fireworks cake with Halloween sprinkles, to suit the season and party I was taking it to. To reflect bonfire night as well, I included the digestive biscuits (aka graham crackers) and marshmallows used to make S’mores, and caramel to represent toffee apples. The popcorn was just for a little added texture, during the season of snuggling up with a hot chocolate and a film to watch.

These fireworks cakes are ideal for handing around as you watch a fireworks display – or to munch while watching a movie as autumn sets in.

Firework cake ingredients

  • Milk chocolate, 500g
  • Digestive biscuits, 200g
  • Cadbury’s Caramel, 200g
  • Mini marshmallows, 150g
  • Popcorn, 20g
  • Sprinkles, to decorate

Equipment

  • Sharp knife
  • Chopping board
  • Large mixing bowl
  • Tablespoon, for stirring
  • Square or rectangular ceramic dish
  • Baking paper

How to make Fireworks cake

  • Chop the biscuits and Cadbury’s caramel bars into small pieces. Crumble up the popcorn with your fingers to create crumbs of various sizes.
  • Line the lasagne or other suitable ceramic dish with a sheet of baking paper. This will stop the tiffin sticking.
  • Break the chocolate into chunks and melt it, either in the microwave (in short bursts, stirring well between each) or in a glass bowl over a pan of boiling water.
  • Add the digestives, Caramel, marshmallows and popcorn to the chocolate. Mix well to combine.
  • Spoon the mixture into the lined baking dish. Scatter over the sprinkles of your choice. Chill to set (for at least an hour).
  • Once the tiffin is set, remove from the fridge for a while so it softens a little before cutting into pieces.
