Mint Slice Biscuit Recipe
My latest tiffin creation is this chocolate mint slice biscuit recipe. I don’t love mint on its own, but throw in some chocolate and I’m happy. As with After Eights. Everyone else says they’re content too – these recipes can do no wrong at the moment.
There are just 4 ingredients, so no faffing about with icing sugar or condensed milk when making these mint slices. Nor a cookie cutter, food processor or measuring out one tsp peppermint essence. You don’t even have to make a biscuit base for this mint chocolate ‘traybake’.
This is ideal for Hallowe’en. Simply add a green topping to this peppermint slice, making it spookier. To do so, melt 50g of white chocolate. Use a little green food colouring to make the chocolate turn green, then drizzle over the top of the Tiffin to decorate. Alternatively – or also – decorate with edible eyes: see the picture of my orange tiffin to get the idea.
This no bake mint slice is a great Christmas make too, the zingy mint cutting through all that sugar, spice and rich food very nicely. You could serve up small mint slices as an after-dinner treat, too – at any time of the year. Such as January, when you need to use that leftover festive chocolate and biscuits…
Makes 12-24 pieces, depending on size
Mint Slice biscuit recipe ingredients
- Dark chocolate, 400g
- Rich Tea biscuits, 100g, broken into small pieces
- Mint chocolate cream (or Aero) 100g, chopped
- Mint Matchmakers, 100g, chopped
Equipment
- Square or rectangular dish
- Baking paper
- Chopping board
- Sharp knife
- Mixing bowl
- Tablespoon (for stirring and spooning)
How to make Peppermint Slice
- Line a suitable square or rectangular dish with a sheet of greaseproof baking paper.
- Melt the chocolate. I do this in the microwave in short bursts, stirring often, & it always works fine. I start with a 30 second burst, then 20, then 10 – if needed. When in doubt, a short time is best, before checking and stirring again.
- Add the biscuit pieces to the melted chocolate, then the chopped minty chocolates. Stir well, then spoon into the dish and chill. It will take about an hour to set properly.
- If possible, remove from the fridge for a while to soften a little before cutting (with a knife warmed in a jug of hot water is best) into bars or squares, then chill again until ready to eat.
