S’mores Rocky Road
This s’mores rocky road is really just a slight variation on the classic rocky road recipe. It’s ideal for autumn, and indeed the batch pictured was made for a Halloween party. With just three ingredients plus whatever you decide to decorate it with, this s’mores slice couldn’t be simpler to make.
All you do is crush some digestives, cut up some marshmallows if required, melt some chocolate and stir it all together. Then you simply press it into a dish, add sprinkles or whatever you like and chill. Later, you can slice it into pieces ready for devouring. Yum!
I used edible eyes here, plus some broken-up Cadbury Caramilk buttons. Halloween sprinkles could also be used, as in the picture featured in my firework tiffin recipe. Using ‘shards’ of buttons with the edible eyes creates a subtly spooky effect.
Kids and adults alike love this rocky road s’mores recipe, and you don’t need to expose young kids to melted marshmallows as hot as lava! You can also pre-prep it so there’s one less thing to do at Halloween or on bonfire night.
Haribo Chamallows were what I could get hold of when shopping for this recipe. I found it easier to cut these huge marshmallows up with scissors. If you can get them, it’s slightly easier to use mini marshmallows.
With the digestives, you want some pieces and some crumb – I find that slicing them up thinly achieves this, but you can put them into a food processor if you prefer. I microwave the chocolate to melt it – stopping and stirring very often until it’s just right – but you can melt it in a glass bowl over a pan of boiling water if you’re more comfortable with that.
With the edible eyes and Caramilk buttons I used, I pressed them into the top a little so they stayed more-or-less in place when the chocolate set. You need to work quickly here, so get everything ready before you melt the chocolate!
S’mores rocky road ingredients
- Milk chocolate, 500g
- Digestive biscuits, 300g
- Marshmallows, around 150g
- Sprinkles or other decoration

- Sharp knife
- Chopping board
- Large mixing bowl
- Tablespoon, for stirring
How to make S’mores slice
- Chop – or bash the biscuits with a rolling pin, -until they form a variety of crumbs and small pieces. A good mix of sizes is best. (I slice mine up.)
- Melt the chocolate. I do this in the microwave – just check every few seconds and stir each time. Remove as soon as it is mostly melted, and stir well. The residual heat ensures that the rest will soon melt as well. Stir again, then leave to cool slightly. (Try a low heat, rather than full power, if you haven’t done this before).
- Line a suitable square or rectangular lasagne or baking dish with a layer of greaseproof paper while the chocolate cools a little.
- In a large bowl, combine the warm chocolate with the other ingredients. Make sure the chocolate is not too hot, or it will melt the marshmallows and they will disappear!
- Press the mixture into a baking tray, smooth over, and add some sprinkles or the decoration of your choice. Chill until set – for at least half an hour.
- Remove from the fridge for a while to soften a little before cutting into bars or squares, then chill again until ready to eat. You can serve this at room temperature if you like, though, as it’s a little softer.
